French Onion Soup
I switched it up a little bit today. I don't drink wine so didn't have any on hand for classic french onion, but I did have a bottle of Jack Daniels so I used a little bit of that. Here's the recipe:
2 Tbls Butter
3 lg onions sliced
2 tsp salt
3 Tbls Jack Daniels
1 tsp basil(dry)
2 Bay leaves
1 can beef consomme
2 cans chicken broth
1 can veg broth
Heat butter in large soup pot. Add in your sliced onions and then sprinkle on the salt. Cook onions over low heat, stirring occasionally until they are a rich brown color. Stir in Jack Daniel's, let it cook off (a minute or two) then add herbs and broth.
Season to taste with salt and pepper.
Simmer 15-20 minutes.
Ladle into ovenproof bowls.
Top each with a slice of French bread and a sprinkle of cheese.
Broil until cheese is melted and bubbly.
Makes 3-5 servings.
